Tutta Bella, ‘All Good,’ has the heart of Naples and the soul of the Rainier Valley. Open early in the mornings for you to sip a latte and a glass of wine in the afternoons. Have a Salerno salad with fresh mozzarella, romaine lettuce, fennel, cucumber, tomato, basil with dijon vinaigrette for $8 or a Mediterranea Pizza with fresh mozzarella, chevre, marinated eggplant, roasted pepper, mushrooms, and basil for $12.50. Making authentic or true Neapolitan pizza means a restaurant must adhere to a strict culinary discipline set by the ‘Associazione Verace Pizza Napoletana.’ These ‘rules’ regulate the preparation of the raw ingredients and the cooking method in a wood fired oven only. This means using approved ingredients such as San Marzano tomatoes, fresh mozzarella, fresh herbs, and fresh yeast.
