Thai Eggplant

The eggplant, colorful, nutritious and odd.

In English gardens,

the purple variety called ‘Aubergine,’

is commonly known as

the ‘garden egg.’

Here,

we have the small round, green,

golf-ball sized Asian variety that is called

Thai eggplant.

Taking my camera into Uwajimaya,

a large, well known local Asian grocery store,

I had a good time for a little while taking shots of all the fruits and vegetables

until I was told I had to have a permit from

the management to take photos.

So I stopped,

but already had some wonderful images.

The few times I’ve tried to cook with eggplant,

the results have been less than pleasing.

Do you have a secret to share

about how to cook them

successfully??

I had a bit of a health scare these past few days,

but tests yesterday

showed

all is well.

  1. I can count on one hand the number of times I’ve had eggplant. It’s just never been commonly used in my family. Odd that you needed a permit to take photos rather than just simple permission. Glad to hear your test results were good and I hope you had a great Christmas!

Madge, we use the purple ones and in the summer when we get bushels of them, we slice them using the Pres mandarin slicer, soak them in salt water, then dip them in bread crumbs and finally egg before frying them gently in olive oil until golden brown. Then after absorbing the oil via paper towels, we place them in zip-locks and freeze so they are ready for me to make eggplant parm…YUM! I never knew of these green ones!!!!…:)JP

    Hope you continue to feel good and you can figure out what is going on with your health. Will keep you in prayer.

    As for eggplant. When I was in high school someone gave Mom a few purple egg plants and instructions on how to cook it. It was a one and only once food at our house.

  5. Very sorry to hear about your health scare! I have never tried to cook with eggplant – and can’t think of a time when I have eaten it. I didn’t realize that there was such a small size – but I guess there are different varieties.
